High in Nutrients

One of the benefits of corn is that it is high in nutrients. A few of these important nutrients are:
  • Thiamin (Vitamin B1), which is used in the metabolism of carbohydrates.

  • Pantothenic acid (Vitamin B5), which helps with physiological functions.

  • Folate, which helps in the generation of new cells. It is especially important before and during pregnancy.

  • Vitamin C, which fights disease.

Good Source of Fiber

One cup of corn provides 18.4 percent of the daily recommendation of fiber. The high fiber content is one of the biggest benefits of corn. Fiber has been shown to lower cholesterol levels and reduce the risk of colon cancer. Fiber is also useful in lowering blood sugar levels in diabetics.

Adding More Corn to Your Diet

How do you enjoy the benefits of corn when it is not mid-summer and corn on the cob is not plentiful? Try corn that has been frozen in the fresh state.

Try corn as a side dish, sautéed with green chilies and onions. Add frozen corn to soup, chili and chowder. Use corn tortillas instead of flour tortillas. Adding corn to your diet a couple of times a week will yield great health benefits.
